Food and Beverage Management Discussion 1 (A Lobster’s Journey). This is part 1 of my Ocean to Table_A Lobster’s Journey video featuring the fisherman and wholesaler’s point of view. Capt. Jimbo will take us on a discovery field trip to explore his business as a commercial fisherman of Florida lobster and stone crabs. And Emily Palma will discuss her business as a wholesaler of the commercial fisherman. This next journey, Part II, will be the retailer/restaurant, and chef to table.
Both videos will be longer than my typical ones because of the content; the 1st is 26 mins; the second video is a little over 16 mins, so plan accordingly. This video was originally filmed in January of 2016 & when we were on board, it was very rough and windy. Therefore, the sound is a little hard to hear in a few clips; but, I have reshot most of the video. A second video was done this year in September on a much calmer day…you will definitely be able to see the difference.
